Things get confused and the antibodies attack the human tissue instead of attacking the casein or Gluten. The body 'turns on itself'. The result can be ulcers, or inflammatory diseases like arthritis, or thyroiditis . . or other autoimmune diseases.
Regarding cancers: well established research (Ref. 4) reports malignant cancers in the small intestine in Gluten sensitive people occurring at more than 80 times the normal rate.
